Ingredients Notes
Chinese chives – Chinese chives have unique garlicky smell that will add flavor to a dish. Chop them finely or into pieces about ½ cm long for even cooking and a balanced bite.
Mushroom powder – Optional, but highly recommended. It adds a rich umami depth thanks to the natural glutamates—think of it as a gentle flavor booster without extra seasoning.

How to Make

STEP 1. Wash the chives thoroughly. Trim off the white stalks and discard them (Image 1). Chop the chives in half centimetre pieces so they look like neat little squares (Image 2). Set aside. Crack three eggs into a bowl, add salt and mushroom powder (Image 3). Beat well with a fork or chopsticks until well-combined (Image 4).

STEP 2. Add the chopped chives into the egg batter (Image 5) and stir until well combined (Image 6). Heat some oil in a frying pan over medium heat. Once you see faint smoke coming out, pour in the egg batter (Image 7). Let it cook gently over low to medium heat (Image 8).

STEP 3. Take a peek, if the bottom part is golden brown, it’s time to flip. Let it cook for while (Image 9). Cook the other side for a little while longer until fully set and lightly browned.
STEP 4. Cut the omelette with your spatula into 4 parts (Image 10). Make sure both sides are well-cooked. Serve warm on a plate.
Pro Tips
- Be patient before flipping. Wait until the bottom is fully set and lightly golden before flipping. This helps prevent breakage and gives you a beautifully cooked omelette.
- Cut only after both sides are cooked. Use a spatula to cut the omelette only after both sides are done. This keeps the edges neat and helps avoid any runny mess in the center.
- Want it scrambled instead? If you prefer a scrambled texture, let the eggs start to set, then gently push them around with your spatula. Pause between pushes to let the curds form, and repeat until cooked to your liking.
How to Serve
This dish is best enjoyed warm, straight from the pan, paired with a bowl of fluffy rice or tucked into a soft Pumpkin Steamed Bun — or even a sweet-savory Cheese Mantou for a little twist. It makes a perfect companion to other homestyle Chinese dishes like Pork and Broccoli Stir Fry, Kikurage Chicken Cauliflower, Eggplant with Ground Pork, or a classic Steamed Pork Patty.
For desserts, finish with Red Bean Pastry, Portuguese Egg Tart, or Snow Skin Mooncake. You can also serve something sweet and cooling like Peach Gum Dessert, Mango Sago Dessert, or a comforting bowl of Pulut Hitam. This chives omelette fits right in for breakfast, lunch or dinner.
FAQs about Chinese Chive Eggs
If Chinese chives are unavailable, you might consider using green onions, but the unique taste of the dish will be altered. Regular chives have a mild onion flavor, Chinese chives (also known as garlic chives) offer a unique garlicky aroma and taste.
For extra fluffy eggs, beat them until frothy before cooking. Some cooks add a splash of water or a cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon water per 4 eggs) to achieve a tender, fluffy texture.
Sure, you can add shrimps, mushrooms, a dash of sesame oil or flavored oil for added flavor.
