Viral recipes in Tiktok always challenge bakers from home bakers to professional bakers to try. They are so fun to recreate at home!
This time I want to share my experiment with this so called Cloud Bread.
The first time I saw the video on Tiktok, I wanted to try it immediately. It is quite hard to believe that it only needs three ingredients, yet it can create such fluffy and beautiful cloud-looking bread!
I did some research first and then I decided to make it. Let’s try this 3 ingredient bread!
What is Cloud Bread?
Cloud Bread is a fluffy, giant puff bread made of egg whites, sugar, and cornstarch. It is basically a softly baked giant meringue.
Maybe some of you are not familiar with meringue. Let me explain: meringue is a whipped egg whites with sugar.
When baked, meringue tastes very soft, light, and crispy. Maybe you have seen lemon pie with meringue on top, a little burnt on the skin.

Egg whites
This is the main ingredient that you cannot skip or substitute. Make sure your egg white is fresh. Please remember that not one bit of egg yolks should be in the egg whites.
Another thing to make sure is that your mixer tools should be clean. It has to be free of water or grease. Otherwise, the egg white will not whip up.
Sugar
Sugar will help stabilize the egg white and develop into meringue. It will also help the egg white be more fluffy.
Cornstarch
Cornstarch will help make the meringue shiny. Moreover, it helps absorb the extra liquid, so the meringue looks more sturdy.
Food coloring
This is optional. Use this a little bit to make it more fun and colorful.

- 90 gr egg white
- 40 gr sugar
- 12 gr cornstarch
- Food coloring
How To Make 3 Ingredient Cloud Bread
- Whip the egg whites. Make sure the utensils are free of water or grease. Use a good kitchen mixer and whip on medium speed until frothy and white.

- Put in the sugar a little bit at a time. Whip with a mixer with low speed first, increasing to high speed. Whip until the meringue is quite stiff, it doesn’t fall off the bowl when turned upside down.
- Sieve the cornstarch. Mix again thoroughly.
- Add a bit of food coloring. I add blue to make it look like cloud.

- I do not mix it thoroughly, so the blue color will appear a bit here and there.
- Prepare a pan with baking paper. Put the meringue and shape it to look like a dome, just like in the video.

- Bake in a preheated oven 150°C for 30-35 minutes. The bread should be brown from the outside.
- Let the bread cool completely.
