This is a very nourishing drink with only three ingredients: lemon, ginger and rock sugar. As simple as that. The ingredients are all easy to get. It is a perfect drink to start the day or to relax in the afternoon.

Ingredient Notes

Rock Sugar – Rock sugar has typically milder sweetness than regular sugar. If you want to use regular sugar, do not substitute it 1:1, use less white sugar as it tastes sweeter than rock sugar.

Pandan Leaves – Adding pandan leaves while cooking the ginger will add an aromatic flavor to the drink.

Variations

Black Pepper  or Cayenne Pepper – This will add some more heat to the drink, if you like.

Ground Turmeric – Add a dash of ground turmeric. It will be even more nourishing.

Green Tea – Brew a cup of green tea and mix it with the ginger lemon drink for more antioxidant power.

How to Make

  1. Peel the ginger and wash clean. Slice the ginger (image 1) or use the handle of a cleaver to crush it.
  2. Put the sliced ginger, rock sugar, pandan leaves into a big pot. Pour water into it. (image 2)
  3. Start cooking with medium heat for one hour. When it boils, turn the heat down.
  4. Strain the ginger water when it is done. Let it cool down before transferring into a bottle or a glass (image 4).
  5. Slice the lemons (image 3). Put some in a jar or bottle where you want to keep the ginger water.

  1. Pour the ginger water in the bottle or jar (image 5). Let the lemon infuse the ginger water for at least one hour or overnight. Keep in the chiller.
  2. The next day, you can pour the lemon infused ginger water in a glass (image 6). Enjoy!
