First, heat some oil in a wok. Put in the minced garlic. Stir fry until the color turns golden.
Put in the mushroom and ground pork, stir fry until it is fragrant and a little bit pale.
Pour in the sauce mixture. Add some water (1-2 cups). Let it boil for 10 minutes.
Taste it then you can turn off the stove and put the ground pork noodle topping in a container. Set aside.
Boil a pot of water.
While waiting, you can prepare the sauce for the noodles. Add oil, fish sauce, pepper to a bowl.
Cut some vegetables, put in the vegetables into the boiling water. Cook for 2 minutes. Sieve. Set aside. Put in the noodles, cook for 2 minutes (remember to check the cooking instructions). Drain the water.
Put in the cooked noodles in the bowl with sauce. Stir well until the sauce is dispersed thoroughly. Transfer to a serving bowl.
Set the vegetables at the side of the noodles. Add minced pork on the top. Sprinkle some leeks on top.

Mix the cooked noodles with the sauce in a separate bowl so when you serve it, the noodles look clean.
Put a pinch of MSG or mushroom powder to add umami flavor to the noodles.
